Our diverse team is united by a passion for culinary excellence and a commitment to delivering outstanding gastronomic experiences.

Executive Director

Donato Altamura

Donato is the Executive Director, guiding the culinary team and managing all facets of food sales and marketing. Originally from Italy, he refined his craft at esteemed culinary schools and has amassed significant experience in prestigious kitchens, including a four-year tenure as a Sous Chef at Cipriani, with roles in Abu Dhabi, Ibiza and Hong Kong.

Executive Chef

Yuri Bottini

Yuri serves as the Executive Chef, leading the kitchen team and overseeing everything from recipe development to team management. A native of Italy, he graduated in 2016 with a Culinary Institute Diploma from the prestigious IPSEOA Angelo Berti in Verona. Since then, Yuri has worked at various acclaimed restaurants in Paris, Salzburg, Ibiza, New York, and Hong Kong.

Sous Chef

Pramish Gurung

Pramish has gained extensive experience in restaurants across Hong Kong and London, notably serving as Chef de Partie for two years at the esteemed Scotts in Mayfair and at the Michelin-starred The Ninth in London. Additionally, Pramish has worked as a Private Chef, where he managed menu planning, procurement, food preparation, team leadership, and overall kitchen operations.
